Baked Honeycrisp Apples

Baked apples aren't typically a "wow" of the dessert world. But I'd like to help you change your opinion on that with some baked Honeycrisp apples. These easy peppermint meringue cookies are actually new to me - but they're so quick to whip up, and so pretty, that they'll definitely remain in my holiday season cookie arsenal.

Enter this little star of a summertime dessert: the delightfully light summer strawberry almond cream tart.
